Frosty the Snowman Waffle Cookies

Easy to assemble, and the kids can join the fun in making them. Ingredients:

  • 8 Reko Pizzelle cookies (Gingerbread or other flavor)
  • 8 large marshmallows (1 per snowman)
  • Icing (for decorating)
    • 3 cups powdered sugar
    • 1-2 tbsp water or milk (to adjust consistency)
    • 1 tsp vanilla extract
  • Mini chocolate chips or black sprinkles or icing (for eyes)
  • Mini candy corn, or orange jelly beans or icing (for nose)
  • Red licorice laces or fondant (for scarf)

Directions:

  1. Arrange Pizzelle cookies flat on a surface.
  2. In a large bowl, beat together the powdered sugar, water and vanilla extract, for smooth icing consistency, thick enough to pipe (add 1 tsp water at a time to adjust if too thick).
  3. Pipe icing in the form of melting snow over the pizzelle cookies; Then place one marshmallow on top of pizzelle and decorate the snowman’s head, using candy and sprinkles.
  4. Let the icing set (dry) for about 30 minutes, so that everything stays in place on the cookies.
